Dessert Sauce Recipes

These sauce recipes are perfect to serve with pound cakes. They turn them into really a very special dessert that will surely please your guests. The recipes are from Sweet Kathleen's Cookbook and I hope you enjoy them!
Blueberry Sauce:
1/2 c. water or orange juice
1/4 c. granulated sugar
2 tsp. cornstarch
1 T. lemon juice
1 T. grated lemon peel
1 1/2 c. fresh or frozen blueberries (if frozen, do not thaw)
In saucepan stir water or orange juice with the sugar and cornstarch until cornstarch dissolves. Bring to boil over medium heat, stirring often. Add lemon juice and peel. Add blueberries and stir for a few seconds (if using frozen, cook until thawed, about 1 minute). If sauce is too thick, add in more liquid and stir for a few seconds.
Lemon Sauce
1/2 c. granulated sugar
1 T. cornstarch
1 c. boiling water
2 tsp. grated lemon peel
2 T. lemon juice
1 T. butter
2 drops yellow food coloring
Combine sugar and cornstarch in saucepan. Add boiling water. Cook over low heat until mixture is thick and clear. Remove from heat and stir in lemon peel, juice, butter and food coloring.
Rum Sauce
1/2 c. packed dark brown sugar
1/2 c. butter
2/3 c. heavy cream
1/4 c. dark rum
Mix all sauce ingredients in a small saucepan. Heat to boiling, over medium heat, stirring constantly. Boil 3 to 4 minutes, stirring until slightly thickened.
Brandied Strawberry Sauce
2 (10 oz.) pkgs. frozen, sliced strawberries
1/4 c. granulated sugar
2 T. cornstarch
1 T. lemon juice
2 T. brandy
In medium saucepan, combine the strawberries, sugar, cornstarch and lemon juice. Cook over medium heat, stirring constantly, until thickened and clear. Cool slightly, stir in the brandy. Chill before serving.
Amaretto Sauce
1 c. heavy whipping cream
1/3 c. granulated sugar
2 (4-oz.) bittersweet chocolate bars, chopped
2 T. butter
4 T. amaretto
Combine the whipping cream, sugar, chocolate and butter in saucepan and cook over low heat, stirring constantly until thick and smooth. Remove from heat and add amaretto. Stir to mix well. Serve warm or at room temperature.
