Mother's Day Recipes


Mother's Day is a day to show our appreciation to that special lady for all the love and support she gives.  I lost my Mom eleven years ago, and I miss her everyday. This Mother's Day give your Mom time and attention and show how much you care. Here are a couple of delicious desserts that will help you treat your Mom to a wonderful sweet surprise.
 
 
ICE CREAM IN HALF MELON
 
1 fresh, whole cantaloupe
1 quart vanilla ice cream
1/4 c. heated caramel sauce
finely chopped nuts
2 pirouette straw cookies
 
Cut the cantaloupe in half and use a spoon to scrape out any seeds. Fill each half with a scoop of ice cream, then drizzle with caramel sauce and sprinkle with nuts. Serve each half melon with a straw cookie so it looks like a big ice cream float. Yummy and so easy!
 
 
BROWNIE TRIFLE
 
1 pkg. (20 oz.) fudgey brownie mix
1/4 c. water
1/2 c. vegetable oil
2 lg. eggs
1 T. instant coffee granules
1 pkg. (3.6 oz.) chocolate pudding mix
1 3/4 c. milk
1/4 c. Kahlua
1 pkg. (8 oz.) toffee bits
3 c. sweetened whipped cream or Cool Whip
Chocolate curls (optional)
 
Preheat oven to 350 degrees F. Use water, oil, coffee, and eggs to prepare brownie mix (in place of the ingredients listed on the package). Bake brownies in a 13x9" pan as directed on package.  Cool.
While brownies are cooling, combine pudding mix, milk, and Kahlua. Prepare as instructed on pudding package.  Cut brownies into one-inch squares. Place about half of the cut brownies in the bottom of a trifle bowl. Spoon half of the pudding over top of brownies. Top with half of the toffee bits (reserve a small handful of toffee bits for the topping), and half of whipped cream. Repeat layer once. Top second layer of whipped cream with reserved toffee bits. Sprinkle with chocolate curls if desired. Mom will be very impressed.
