Tea Time Recipes


 
Scones, muffins and tea breads are perfect for a formal or informal tea.  I am including some wonderful and easy recipes for spreads and toppings to accompany your goodies.
 
Lemon Curd
3 lg. eggs
1 c. granulated sugar
1/2 c. fresh lemon juice
1/4 c. (1/2 stick) butter, melted
1 T.  grated lemon peel
 
In the top of a double boiler, beat eggs and sugar.  Stir in lemon juice, butter and lemon peel.  Cook over simmering water for 15 minutes or until thickened.
 
  
Honey-Cinnamon Butter
1 c. (2 sticks) butter, softened
1/2 c. honey
1 tsp. ground cinnamon
 
Beat butter, honey and cinnamon on medium speed until smooth.  Cover and let chill  before serving.  Remove from the refrigerator about an hour before using for easier spreading.
 
  
Berry Butter
2 T. dried fruit (cranberries, blueberries or your favorite dried fruit)
1/2 c. boiling water
1/2 c. (1 stick) butter, softened
3 T. confectioners' sugar
 
In a small bowl, combine dried cranberries, blueberries (or your favorite dried fruit) and boiling water.  Let stand for 10 minutes.
Drain well and finely chop berries.  Beat butter and confectioners' sugar on medium speed until smooth.  Stir in the berries.  Cover and let chill before serving. Remove from refrigerator about an hour before using for easier spreading.
 
 
 Apricot-Cinnamon Butter
1 c. (2 sticks) butter, softened
6 T. apricot preserves
1/2 tsp. ground cinnamon
 
Combine all ingredients in small bowl.  Beat at medium speed until smooth.  Cover and let chill before serving.  Remove from refrigerator about an hour before using for easier spreading.
 
 
 Apple-Cinnamon Spread
1/4 c. (1/2 stick) butter, softened
8 oz. cream cheese, softened
1 c. confectioners' sugar
2 T. frozen apple juice concentrate
1 tsp. ground cinnamon
 
Combine all ingredients in mixing bowl and beat at medium speed until smooth.  Cover and let chill before serving. Remove from refrigerator about an hour before using for easier spreading.  Wonderful with pumpkin bread.
 
 
 Honey-Orange Cream Cheese Spread
8 oz. cream cheese, softened
3 T. honey
2 tsp. grated orange peel
1/2 tsp. ground cinnamon
 
Combine all ingredients in mixing bowl and beat on medium speed until smooth.  Cover and let chill before serving.  Remove from refrigerator about an hour before using for easier spreading.
 
These spreads and toppings are so delicious with any of our scones, muffins and tea breads.  Sit yourself down with a cup of tea and enjoy!
